I have never tried the authentic quesada pasiega, despite having been a few times in Cantabria . I wanted to make the authentic quesada pasiega and I did not have Burgos cheese that is one of the main ingredients, in the absence of curdled milk. I had a box of spreadable cheese about to expire and with it I did it. That's why the name of cheesecake, do not bother anyone hehe.
- 250 gr of cheese spread
- 500 gr of whole milk
- 2 eggs
- 200 g sugar
- 100 g butter
- 150 g pastry flour
- The zest of a lemon
- A little ground cinnamon
- A bit of butter to grease the mold
Preheat the oven to 180º.
We grease a removable mold with butter.
In the glass of the Thermomix, we toss the cheese and we crush for 10 seconds at speed 5. We lower the rest that have remained in the walls of the glass towards the blades.
Add milk, eggs, sugar, lemon zest and cinnamon. we program 1 minute at speed 6.
Add the butter, previously melted for a few seconds in the microwave, and mix for 15 seconds at speed 4.
We throw the flour and program for 20 seconds at speed 6.
Let's pour in the reserved mold and We bake for 1 hour or so, it depends on each oven. Click with a stick and if it comes out clean this list. The top part has to be golden brown. In the oven it grows a lot and then goes down. Let it cool and then put it in the fridge. Before serving, remove it from the refrigerator for half an hour so that it has a creamier texture.
